Upgrade that bottle gathering dust in the cupboard with a bit of fall flavour in this simple apple gin recipe (add lavender if you're feeling fancy!)
2 apples, coarsely chopped
1 1/4 cups gin, plus more to cover apples
2 tbsp honey
1/4 tsp dried lavender
hard cider, to serve
PACK apples into a 1-L glass Mason jar. Add enough gin to cover. Cover with lid. Let stand at room temperature for 1 week.
STIR in 1 1/4 cups more gin, honey and dried lavender. Serve strained over ice or top with hard apple cider.
