Ingredients

  • 1/4 cup tahini

  • 1/3 cup boiling water

  • 1 tbsp lemon juice

  • 1/4 tsp salt

  • 1 small garlic clove, minced (optional)

  • 3 large roasted beets

  • cilantro

  • parsley

  • 1/2 lemon

Instructions

  • WHISK  tahini with boiling water, lemon juice, salt and garlic in a small bowl.

  • TOSS with roasted beets, peeled and cut into wedges.

  • SPRINKLE with cilantro or parsley.

  • SQUEEZE 1/2 lemon over beets.
