Roasted cauliflower with tahini dressing

Chatelaine Triple Tested

Ingredients

  • 1 medium cauliflower, cut into bite-sized pieces

  • 2 tbsp olive oil

  • 1/4 tsp salt

  • 1/4 cup tahini

  • 3 tbsp water

  • 2 tbsp lemon juice

  • 1 garlic clove, minced

  • 1/4 tsp salt

  • 2 tbsp chopped parsley

Instructions

  • TOSS cauliflower with olive oil and salt. Spread out on a baking sheet and roast at 400F, stirring halfway through, 30 to 40 min.

  • STIR tahini with water, lemon juice, garlic and salt in a small bowl. Pour over roasted cauliflower. Sprinkle with parsley.
