1 medium cauliflower, cut into bite-sized pieces
2 tbsp olive oil
1/4 tsp salt
1/4 cup tahini
3 tbsp water
2 tbsp lemon juice
1 garlic clove, minced
1/4 tsp salt
2 tbsp chopped parsley
TOSS cauliflower with olive oil and salt. Spread out on a baking sheet and roast at 400F, stirring halfway through, 30 to 40 min.
STIR tahini with water, lemon juice, garlic and salt in a small bowl. Pour over roasted cauliflower. Sprinkle with parsley.
