Amber rum gives this twist on the classic mojito its golden colour and rich flavour.
6 to 10 mint leaves
3/4 oz simple syrup, recipe link below
2 oz amber rum
1 oz lime juice
2 to 4 oz chilled soda water
slice of lime, to garnish
crushed ice
PUT mint leaves in a tall glass. Add simple syrup (get our simple syrup recipe) and use the back of a wooden spoon to muddle the mint with the syrup.
FILL the glass with crushed ice. Add rum and lime juice. Stir.
ADD chilled soda water. Garnish with a lime slice.
