A classic Cuban mojito is a simple yet sophisticated party favourite. Just muddle up some mint, grab a few limes, add some rum, garnish and voilà.
1 cup mint leaves
6 tbsp simple syrup, (recipe link below)
1/4 cup lime juice
1 1/2 cups lime juice
1 cup white rum
soda water
Put mint leaves in a pitcher. Pour in 1/4 cup lime juice. Using a muddler or the back of a wooden spoon, mash to release flavour from mint. Add simple syrup and 1 1/4 cups more lime juice. Stir in white rum. Add ice to 6 tall glasses. Divide mojito mixture among them. Top with club soda. Garnish with sprigs of mint and sliced lime.
