These bite-sized snacks are perfect for New Year's entertaining or a post-holiday recess.
2 cups chopped cooked lobster meat, (3 to 4 lobster tails)
1/2 cup diced celery
1/3 cup mayonnaise
1 green onion, finely chopped
2 tbsp chopped fresh parsley
1 tsp lemon zest
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp pepper
1/8 tsp cayenne pepper
10 small brioche buns, (or dinner rolls)
4 tsp melted butter
PREHEAT oven to 400F. Stir lobster, celery, mayo, onion, parsley, lemon zest, lemon juice, salt, pepper and cayenne in a medium bowl.
CUT into the buns about halfway through. Brush tops and insides with butter and place on a baking sheet. Toast for 5 min.
DIVIDE lobster mixture among buns. Serve immediately.
